Scaled Gofio

Ingredients:

1 liter of strained fish broth, 1 sprig of mint, ¼ kg of gofio.

Elaboration:

1. Place the gofio in a bowl with the sprig of mint and add the broth, boiling slowly and stirring constantly so that lumps do not form. It is also made with vegetable broth, stew or stew.

It can be served with red onion (previously rested in vinegar and water) or sprinkled with fried garlic.

TIP:

El secreto está en ligar bien el gofio con el caldo de pescado para que no queden grumos y su textura sea sedosa. Además, si el caldo de pescado lleva algo de marisco, potenciará su sabor.
