Sweet Potato or Angel Hair Trout
Ingredients :
1 kg of yellow sweet potato, ¾ kg of sugar, 100 grams of peeled almonds, grated lemon zest, ground cinnamon, 3 tablespoons of butter, 1 cup of olive oil and ½ kg of flour.
Elaboration:
1. For the filling, the sweet potatoes are stewed with water and salt and crushed.
In a bowl, mix the sweet potatoes with the crushed almonds, the sugar, the lemon zest and the cinnamon, until a thick paste is obtained and set aside.
2. For the puff pastry, make a mountain with the flour and place the butter and oil in the center and begin to knead until it is uniform and let it rest.
3. Sprinkle a little flour on the table and stretch the dough on it with the help of a rolling pin and make 8 cm pancakes. in diameter and placed in filling in the center and folded, taking care that the corners are well joined with the help of a fork.
4. Finally, they are fried in very hot oil, sprinkled with icing sugar and ready to be consumed.
Another variant is to make the angel hair filling.
TIP:
They are typical of Christmas. To get them crispy on the outside, in addition to frying them over high heat, put them on an absorbent paper when removing them.
