Green Mojito


1 head of garlic, 3 green peppers, 1 teaspoon of cumin seeds, 1 bunch of coriander, 4 tablespoons of vinegar, 15 tablespoons of olive oil and coarse salt to taste.



1. In a mortar, crush the peeled and chopped garlic, the cumin, and the coarse salt, then add the chopped peppers and the chopped coriander, continuing to crush.

2. Finally it is mixed with the oil, vinegar and a little water to give it the desired consistency.

This mojo can be kept for months in the fridge.

Another variety of mojo is to use, with the same recipe, parsley instead of coriander.
