Mole Eggs

Ingredients: 8 egg yolks, 1 glass of water, 1/4 kg of sugar, cinnamon sticks and lemon zest.

Elaboration:

1. In a glass container, beat the yolks with a tablespoon of water in a bain-marie until it acquires a thick consistency.

2. It withdraws from the fire without stopping to move.

3. Aside a syrup is made by diluting the sugar in the rest of the water, with the lemon and cinnamon over the fire, until it thickens.

4. When the syrup is warm it is added to the yolks slowly and without stopping beating. They are placed in glasses, before it cools down and garnished with cinnamon.

TIP:

The trick to have consistency is that the syrup is well made and when beating it, do it energetically until the yolks grow and do not fall.
